Sweet Carrot Salad

 I'll admit I am not a big planner when it comes to meals for the week. 

I may have a couple meals in mind when I do my shopping but for the most part I get a bunch of produce and just create things from what I have.  I had some napa cabbage I needed to use up so I made this crunchy little "coleslaw" looking salad!  Don't let the "coleslaw" part scare you though, it is pretty yummy (and that's coming from someone who isn't much of a coleslaw fan) plus it's dairy free!

So what I threw together was:

4 cups chopped Napa cabbage, cleaned and spun dry

3 large carrots, peeled and chunked

1 large honey crisp apple, cored

Simply combine in food processor until desired texture is reached. 

Then in a separate bowl, whisk together:

2 Tablespoons (pulp free) Orange Juice

1 teaspoon Apple Cider Vinegar with the mother

1 Tablespoon Olive Oil

A Pinch each of cinnamon, nutmeg and salt.

Toss the "coleslaw" mixture in the dressing and let it sit for about 10 minutes 

Toss again before serving. Makes 4 servings.

SIDE NOTE: The pasta dish here was just peppers, onions, and tomatoes that I sauteed and tossed with the pasta and then some cilantro before serving and of course topped off with some feta cheese! 

Healthy doesn't have to be complicated or time consuming!
