Veggie Friatta

This is such a simple meal and works for anytime of the day! 

It's also great to prepare ahead of time and warm up.
You can mix up the combos
and add as many veggies as you'd like!


1 tablespoon avocado oil
I large carrot sliced thin
1 cup diced tomatoes
1/2 medium sweet onion, diced
1/2 a Sweet Pepper diced
2 cups raw spinach (unpacked)
15 eggs, beaten with salt, pepper and paprika
1/2 can coconut milk (Be sure to shake well before opening)
Feta cheese as desired (optional)

Saute everything but the spinach in the avocado oil
for 5-7 minutes or until the onions are clear.

While veggies are cooking add eggs to a bowl and whisk.
Then whisk in coconut milk, mix well.

Lightly coat the iron skillet with additional oil.
Place a layer of spinach at the bottom of the skillet.
Pour half the beaten eggs over it.
Evenly distribute saute'd veggies into the pan.
Layer remaining spinach on top again and then
pour remaining eggs on top.

Bake at 350 for 20 minutes, then sprinkle with feta cheese and bake until done.
